Cut the cubes first and put them back in the refrigirator. Prepare the lemon sauce once the salmon starts baking. Be very patient with the lemon sauce so the butter doesn’t break.
The Salmon
1. Preheat the oven to 210°C.
2. Remove scales from the salmon and cut into portion-sized pieces. Season with salt and black pepper, then lightly brush the salmon with oil.
3. Lightly oil a baking dish and arrange the salmon pieces inside.
4. Bake for 20 minutes, or until the salmon is cooked through and flakes easily.
The Lemon Butter
1. Cut the butter into small cubes and return it to the refrigerator. Keeping the butter very cold is essential for a smooth, creamy sauce.
2. Pour the lemon juice into a small saucepan. Heat over medium-high heat until the juice reduces to about half of its original volume.
3. Add a pinch of salt then reduce the heat to the lowest possible setting.
4. Add the cold butter cubes a few pieces at a time, stirring continuously until each addition has completely melted before adding more. Continue until all the butter has been incorporated and the sauce is smooth and creamy.
Serve with roasted potatoes and a bright salad.
